Do you bake with your kids? I used to and as life has gotten busier, we just haven’t baked as much together. But as I sit here and count down the days until my oldest child leaves for college (*insert giant lump in throat*), it reminds me that my time with my kids is short and precious.
I try to spend time with my kids doing things they love like shopping, working out and watching endless videos on every topic under the sun — but I also need to remember that there’s something special about being in the kitchen together. Not only is it about teaching them useful cooking tips so they can hopefully leave the nest equipped with the basics, but the entire process of measuring and mixing, to testing and tasting is a true bonding experience.
The biggest reason I don’t bake more with my kids is time. Just the word bake can make some of us groan as we think of slaving away in the kitchen. But when I stop and think about it, it doesn’t take that much time after-all. Especially if you have the right products on hand.
I’m pretty good at keeping a stock of Pillsbury cake mixes and frosting for those moments we either get a sweet tooth, or someone needs to take cupcakes to school the next day and they remembered to tell you after dinner. It happens right?
What I love about cake mixes is the ease and cost. There are so many fun flavors that fall in line with the current season or holiday and having some on-hand for any moment that comes up makes me feel like I sometimes have it together. Just look at all of the fun flavors I filled my cart up with at Walmart: Key lime, blue raspberry and Spring Funfetti. YUM.
I’m ready for some serious Easter baking with my kids! Some of my favorite childhood memories are from the kitchen. From baking disastrous cakes with my brother (side note: I learned early on that baking soda is not a good substitute for baking powder…even if they’re both white) to big cooking wins when I made my own chocolate chip cookies.
When I asked my son what he wanted me to make first, he chose the Key Lime Cake Mix and frosting. To which I said…excellent choice!
I love making cake mix cookies because they’re easy and a crowd pleaser. They turn out so soft and moist. Here’s the scoop on the Key Lime Coconut Cake Mix Cookies.
To make the cookie, you only need three ingredients: the cake mix, eggs and oil. That’s it. Mix those ingredients up with a wooden spoon to form a dough and you’re ready to bake them. I wanted these bite sized, so I used a small scoop to place them on the cookie sheet.
As you can see they’re pretty tall and they only flatten out a tad bit when baking. To easily remedy that, take a glass bottom and lightly press down to flatten them a bit. If it starts to stick, place the bottom of the glass in a bit of flour.
Bake for 5 to 6 minutes, until the edges are starting to turn brown. Let them cool and then you’re ready to ice them. I used the Pillsbury Key Lime Icing. I prefer to pipe the icing onto cookies, so my little trick to do this is to place the icing in the refrigerator for about an hour. It makes it a bit thicker to pipe on. And I just use a ziploc bag and snip a small end out of the corner for a piping bag.
After you ice the cookies, sprinkle on a little flaked coconut and colorful sprinkles.
These turned out SO good!

- One Pillsbury Key Lime Cake Mix
- 2 Eggs
- 1/3 cup vegetable oil
- One Pillsbury Key Lime Icing
- Shredded coconut
- Decorative sprinkles
- 1. Heat oven to 375 degrees F.
- 2. Mix together the cake mix, eggs and vegetable oil with a wooden spoon. It will be very thick, but just keep mixing until all ingredients are mixed together well. It should form one large ball when you're done.
- 3. Spray a cooking sheet with cooking spray.
- 4. Using a scoop or spoon, scoop the dough out and place on the greased cookie sheet.
- 5. Press down the tops of the cookies lightly with a glass bottom to flatten out a bit
- 6. Bake for 5 to 7 minutes, until the edges just begin to brown.
- 7. Transfer cookies to a wire rack to cool.
- 8. Ice the cookies and top with coconut and sprinkles.
- Tip: Refrigerate the icing for about an hour so it will harden and be easier to work with. Pipe on the icing with a piping bag or ziploc bag.
