The minute I feel even an ounce of fall in the air, I break out the apples and oats to make apple crisp. It is by far one of mine and my husband’s favorite desserts in the colder months. There’s something about the smell of apples and cinnamon filling the house, plus that scoop of vanilla ice cream on a warm dessert, that makes this the perfect fall dessert.

Since we try to eat (mostly) gluten free (I cheat ALL the time – Sigh), I’ve been experimenting with creating a recipe without the flour. Some have been too dry or the oats are too chewy. But I went back to the basics of an apple crisp recipe, plus a secret ingredient inside (or not so secret) – caramel. The caramel inside this dessert makes it perfection. This is now our favorite Apple Crisp Recipe and you can guarantee I’ll be making this a gazillion times over the next few months. To make this even extra fun, I baked these in red ramekins. Individual desserts are THE best!

How to Make Caramel Apple Crisp

Step one: Lightly grease the ramekins.

Step two: Prepare the topping by combining the oats, brown sugar, salt and melted unsalted butter.

Step three: Peel, core and cut into chunks the apples. I use Braeburn apples because in my experience they have cooked the best in a crisp. I also cut up the apples smaller for this recipe since I was baking them in ramekins. For a regular apple crisp in an 8×8, I cut them into slices.

Step four: Combine the apples, brown sugar and cinnamon in a bowl.

Step five: Spoon the apple mixture into the greased ramekins. 

Step six: Drizzle some caramel topping over the apples.

Step seven: Spoon the oat topping over the apples and caramel.

Step eight: Bake in a 350 degree oven for 30 – 35 minutes on a baking sheet.

Step seven: Serve with ice cream and a drizzle of caramel topping.
