Ingredients

  • 1 Tbsp butter
  • 2 Tbsps olive oil
  • 3 garlic cloves finely chopped
  • 1/2 yellow onion diced
  • 1 package Hillshire Farm Smoked Sausage sliced into rounds
  • 3 cups fresh spinach
  • salt and pepper to taste
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 3 cups potatoes peeled and cubed
  • 4 cups 1 carton of chicken broth
  • 3/4 cup milk
  • 1/4 cup heavy cream

Instructions

  • Melt the butter and olive oil over medium high heat in a large soup pot.
  • Add the diced onions, garlic, smoked sausage, spinach, spices, salt and pepper; stir to combine the ingredients and cook for about 5 minutes, stirring occasionally.
  • Stir in the potatoes.
  • Add the chicken broth; stir and bring to a boil.
  • After it starts to boil, reduce the heat and simmer for about 10 minutes, or until the potatoes are cooked and tender.
  • Add in the milk and cream, stirring just until heated through.
  • Remove from heat.
  • Taste and add more salt if necessary.
  • Ladle into bowls and serve with crackers or warm french bread
