Creamy Smoked Sausage and Potato Soup

- 1 Tbsp butter
- 2 Tbsps olive oil
- 3 garlic cloves finely chopped
- 1/2 yellow onion diced
- 1 package Hillshire Farm Smoked Sausage sliced into rounds
- 3 cups fresh spinach
- salt and pepper to taste
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 3 cups potatoes peeled and cubed
- 4 cups 1 carton of chicken broth
- 3/4 cup milk
- 1/4 cup heavy cream
Melt the butter and olive oil over medium high heat in a large soup pot.
Add the diced onions, garlic, smoked sausage, spinach, spices, salt and pepper; stir to combine the ingredients and cook for about 5 minutes, stirring occasionally.
Stir in the potatoes.
Add the chicken broth; stir and bring to a boil.
After it starts to boil, reduce the heat and simmer for about 10 minutes, or until the potatoes are cooked and tender.
Add in the milk and cream, stirring just until heated through.
Remove from heat.
Taste and add more salt if necessary.
Ladle into bowls and serve with crackers or warm french bread
