Avocado Cilantro Lime Sauce
- 1/2 cup So Delicious Dairy Free Organic Unsweetened Almondmilk
- Half a medium avocado
- 1 cup of cilantro
- Juice of 1 lime
- 1 garlic clove diced
- 1/4 tsp of salt and pepper
Black Bean Tacos
- 1 Tbsp olive oil
- 1/2 red onion diced
- 1 red bell pepper diced
- 1 jalapeno finely diced
- 1 Tbsp. Chili Powder
- 1 tsp salt
- 1 tsp minced onion
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 2 cans black beans drained and rinsed
- Slaw Mix to top
Avocado Cilantro Lime Sauce
Black Bean Tacos
Heat up the olive oil in a skillet and cook the red onion and red bell pepper until soft, about 3 to 4 minutes.
Add the diced jalapeno and cook for another minute.
Add the chili powder, salt, minced onion, garlic powder and cumin to the skillet. Mix it with the onion, pepper, jalapeno concoction and cook for 1 minute.
Add the two cans of drained and rinsed black beans.
Cook for 2 to 3 minutes, until beans are heated through.
