Ingredients

Avocado Cilantro Lime Sauce

  • 1/2 cup So Delicious Dairy Free Organic Unsweetened Almondmilk
  • Half a medium avocado
  • 1 cup of cilantro
  • Juice of 1 lime
  • 1 garlic clove diced
  • 1/4 tsp of salt and pepper

Black Bean Tacos

  • 1 Tbsp olive oil
  • 1/2 red onion diced
  • 1 red bell pepper diced
  • 1 jalapeno finely diced
  • 1 Tbsp. Chili Powder
  • 1 tsp salt
  • 1 tsp minced onion
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 2 cans black beans drained and rinsed
  • Slaw Mix to top

Instructions

Avocado Cilantro Lime Sauce

  • Just place all of these ingredients in your blender or food processor and whip it up. In a few seconds, you'll have a beautiful green sauce worthy of topping the best tacos you can create.

Black Bean Tacos

  • Heat up the olive oil in a skillet and cook the red onion and red bell pepper until soft, about 3 to 4 minutes.
  • Add the diced jalapeno and cook for another minute.
  • Add the chili powder, salt, minced onion, garlic powder and cumin to the skillet. Mix it with the onion, pepper, jalapeno concoction and cook for 1 minute.
  • Add the two cans of drained and rinsed black beans.
  • Cook for 2 to 3 minutes, until beans are heated through.
